  • 4 large bell peppers
  • 1 lb lean ground turkey
  • 1 medium onion, chopped
  • 1/2 tablespoon minced garlic
  • 2 tablespoons taco seasoning
  • 1 cup canned black beans, drained and rinsed
  • 1 cup corn
  • 2 cups tomato salsa
  • 1 cup cooked brown rice
  • 1 cup shredded cheese (Mexican blend or sharp cheddar)
  • Sour cream or Greek yogurt
  • Chopped cilantro
  • Lime wedges
  • Sliced avocado

Instructions

  1. Preheat oven to 350°F (175°C). Cut bell peppers in half lengthwise and remove seeds. Place in a greased baking dish and bake for 15 minutes.
  2. In a skillet over medium-high heat, cook ground turkey until browned. Add onion and garlic; sauté until softened.
  3. Stir in taco seasoning, corn, black beans, salsa, and cooked rice. Simmer for about 2 minutes.
  4. Stuff each pepper half with the filling and top with cheese. Bake for an additional 15 minutes until cheese is melted.
  5. Serve hot with desired toppings.
