  • 1/4 cup powdered sugar
  • 2 tablespoons softened butter (plus extra for chocolate)
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 4 ounces dark chocolate
  • 1/4 cup chopped pistachios (for garnish)
  • Additional powdered sugar for dusting
  • Optional: honey for drizzling

Instructions

  1. Prepare the pistachio filling by pulsing shelled pistachios in a food processor until finely ground. Add powdered sugar, softened butter, vanilla extract, and salt; blend until smooth. Chill for 15 minutes.
  2. Melt dark chocolate with additional butter in a microwave-safe bowl, heating in intervals until smooth.
  3. Preheat oven to 350°F (175°C).
  4. Slice each croissant horizontally and spread 1–2 tablespoons of chilled pistachio filling inside. Drizzle with melted chocolate before closing.
  5. Place assembled croissants on a parchment-lined baking sheet and bake for 5–7 minutes until warmed through.
  6. Once baked, drizzle with more melted chocolate, sprinkle with chopped pistachios and dust with powdered sugar.
