  • 1 medium onion chopped
  • 2 medium carrots peeled & chopped finely
  • 2 teaspoons garlic minced
  • 1/2 tablespoon red apple vinegar
  • 1/2 teaspoon Italian seasoning
  • 1/2 tablespoon sugar
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/4 teaspoon crushed red pepper flakes optional
  • Salt (to taste)
  • Pepper (to taste)

Instructions

  1. In a soup pot over medium-high heat, brown the ground beef until fully cooked.
  2. Add chopped onions, celery, carrots, and garlic; sauté for 8-10 minutes until softened.
  3. Stir in crushed tomatoes, diced tomatoes, drained beans, chicken broth, vinegar, sugar, and seasonings. Bring to a boil.
  4. Reduce heat and let simmer partially covered for 15-20 minutes to meld flavors.
  5. Add ditalini pasta and cook until tender (about 15-20 minutes). Adjust seasoning with salt and pepper before serving.
