  • 9 cups whole kernel corn (fresh or frozen)
  • 3 cups apple cider vinegar
  • 2 cups diced onion
  • 1 cup granulated sugar
  • 1 cup diced green bell pepper
  • 1/2 cup diced red bell pepper
  • 2 tablespoons salt
  • 1.5 tablespoons celery seed
  • 1.5 tablespoons mustard seed

Instructions

  1. Prepare canning jars by warming them.
  2. In a stainless steel pot, combine all ingredients.
  3. Bring the mixture to a boil while stirring frequently.
  4. Cover and simmer for 15 minutes, stirring occasionally.
  5. Remove from heat and jar the relish while hot.
  6. Leave a 1/2 inch headspace in each jar and remove air bubbles.
  7. Clean jar tops with vinegar-dampened cloth.
  8. Process jars in a hot water bath for 15 minutes.
  9. Cool jars in a draft-free location for 12-24 hours.
  10. Check seals, label jars, and store them in the pantry.
