  • 1 cup low-sodium chicken broth
  • ⅔ cup low-sodium soy sauce
  • ⅓ cup apple juice
  • ⅓ cup ketchup
  • ¼ cup bourbon (or substitute)
  • 2 tablespoons apple cider vinegar
  • 1 cup brown sugar
  • ½ teaspoon ground ginger
  • ½ teaspoon onion powder
  • Optional: crushed red pepper flakes

Instructions

  1. Coat the chicken: In a medium bowl, mix cornstarch, salt, and pepper. Toss diced chicken until evenly coated.
  2. Brown the chicken: Heat vegetable oil in a large skillet over medium-high heat. Add coated chicken in batches, cooking for about 3 minutes on each side until browned but not fully cooked. Remove from skillet.
  3. Prepare the sauce: In the same skillet, sauté garlic for about 30 seconds. Add broth, soy sauce, apple juice, ketchup, bourbon, vinegar, brown sugar, ginger, onion powder, and optional red pepper flakes. Bring to a gentle boil.
  4. Simmer with chicken: Return browned chicken to the skillet and simmer on low heat for about 10 minutes until sauce is reduced by half.
  5. Thicken if desired: Mix additional cornstarch with cold water and stir into the sauce; simmer for another two minutes.
