Instructions

  2. Heat olive oil in a large skillet over medium heat. Add chicken, seasoned with salt and pepper, and cook until browned (about 5–7 minutes).
  3. Stir in chopped bell pepper; cook for another 3–4 minutes until softened.
  4. In a bowl, mix pineapple juice, soy sauce, honey, vinegar, garlic, and ginger. Pour over chicken in skillet.
  5. Create a cornstarch slurry by mixing cornstarch with water and add it to the skillet while stirring until thickened (about 2 minutes).
