  • 2 teaspoons instant yeast

  • 1 cup unsalted butter (for dough)
  • 8 ounces high-quality chocolate batons or semi-sweet chocolate
  • 1 large egg (for egg wash)
  • 1 tablespoon milk (for egg wash)

Instructions

  1. In a large bowl, mix flour, sugar, salt, and instant yeast. Gradually add cold milk while stirring until combined. Knead on a floured surface until smooth. Cover and let rest for 30 minutes.
  2. Flatten chilled unsalted butter between parchment paper into a rectangle and chill until firm. Roll out rested dough into a larger rectangle. Place chilled butter rectangle on one half of the dough and fold over.
  3. Roll out the dough-butter package into an elongated rectangle; fold into thirds like a letter. Repeat this process three times to create layers.
  4. Roll out the dough again to about ¼ inch thick and cut triangles. Place pieces of chocolate at the wide end and roll tightly toward the point, curving slightly into crescent shapes.
  5. Allow croissants to rise on a lined baking sheet for about 90 minutes until doubled in size.
  6. Preheat oven to 400°F (200°C). Brush croissants with egg wash and bake for about 20 minutes, or until golden brown.
