  • 2 1/4 tsp Instant Yeast

  • 1 cup Unsalted Butter (cold)
  • 16 pieces Chocolate Batons or Semi-Sweet Chocolate
  • 1 tbsp Milk (for brushing)
  • Confectioners’ Sugar (for dusting)

Instructions

  1. Combine flour, sugar, salt, and yeast in a large bowl. Gradually add cold milk until a dough forms. Knead briefly, cover, and let rest for 30 minutes.
  2. Roll out the dough into a rectangle. Pound cold butter between parchment paper into an even rectangle and place on one half of the dough; fold the other half over.
  3. Roll into a long rectangle and fold into thirds. Repeat this step two more times, chilling between folds as necessary.
  4. Roll out again and cut triangles about 5 inches wide at the base. Place chocolate batons at the base of each triangle and roll tightly toward the tip.
  5. Preheat oven to 400°F (200°C). Place croissants on lined baking sheets, brush with milk, and bake for about 20 minutes until golden brown.
