  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 9×13-inch baking pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, beat the eggs with brown sugar, granulated sugar, vegetable oil, applesauce, and vanilla until smooth.
  4. Gradually add the dry mixture to the wet mixture and stir just until combined. Fold in grated carrots and nuts if using.
  5. Pour the batter into the prepared pan and bake for 25–30 minutes or until a toothpick comes out clean. Allow to cool completely.
  6. For the frosting, beat cream cheese and butter until creamy. Gradually add powdered sugar and vanilla; mix until fluffy.
  7. Spread frosting over cooled cake bars, cut into squares, and serve.
