  • 1 cup strawberries, hulled and sliced
  • 1 large English cucumber, thinly sliced
  • 2 tbsp chopped fresh mint or basil
  • 2 tbsp slivered almonds or sunflower seeds (toasted, optional)
  • 1 tbsp fresh lemon juice or balsamic vinegar
  • 1 tsp honey or maple syrup
  • 2 tbsp olive oil
  • Salt and black pepper, to taste

Instructions

  1. Wash and dry strawberries and cucumber. Hull strawberries and slice them; thinly slice the cucumber.
  2. In a small bowl, whisk together lemon juice (or balsamic vinegar), honey (or maple syrup), olive oil, salt, and pepper.
  3. In a large mixing bowl, combine sliced cucumbers, strawberries, chopped herbs, and cheese if desired.
  4. Drizzle half of the dressing over the salad and gently toss to coat without crushing the fruit.
  5. Transfer to a serving platter, garnish with toasted nuts/seeds and extra herbs if desired. Drizzle with remaining dressing before serving.
