Instructions

  1. Prepare the yeast mixture by mixing warm milk, warm water, and yeast in a bowl. Let it sit for about 5 minutes until bubbly.
  2. In a large bowl, combine flour, sugar, and salt. Stir in the yeast mixture until a dough forms.
  3. Knead the dough on a floured surface for about 5 minutes until smooth.
  4. Place the dough in an oiled bowl and cover with a kitchen towel to rise for about 1 hour.
  5. While the dough rises, shape cold butter between parchment paper into a rectangle and chill.
  6. Roll out the risen dough into a rectangle; place the chilled butter block in the center and fold the dough over it.
  7. Roll out to form a long rectangle; fold into thirds like a letter and chill for 30 minutes.
  8. Repeat rolling and folding two more times with chilling in between.
  9. Roll out again, cut triangles from the dough, add pistachio paste at the wide end, and roll into croissants.
  10. Place on a baking sheet lined with parchment paper and let them rise for another hour.
  11. Preheat oven to 400°F (200°C). Brush croissants with beaten egg for glossiness.
  12. Bake for about 20-25 minutes until golden brown; cool slightly before dusting with powdered sugar.
