  • 10g salt
  • 10g dry yeast
  • 250ml warm water
  • 250g cold unsalted butter

Instructions

  1. In a large bowl, combine flour, sugar, salt, and dry yeast.
  2. Gradually add warm water while mixing until a smooth dough forms. Knead for 5-7 minutes until elastic.
  3. Shape the dough into a ball, cover it with a clean cloth, and let it rest for 1 hour until doubled in size.
  4. Prepare the butter layer by placing cold butter between parchment paper and rolling it into a rectangle (20x15cm). Refrigerate for 10-15 minutes.
  5. Roll out the rested dough into a rectangle (40x30cm) and place the butter in the center. Fold the edges over the butter and seal.
  6. Roll out again into a rectangle and fold into thirds like an envelope; repeat this process two more times.
  7. Wrap in plastic wrap and refrigerate for another hour.
  8. Roll out once more to cut into triangles; shape into croissants by rolling from base to tip.
  9. Place on a baking sheet lined with parchment paper, cover, and let rise for about an hour until doubled.
  10. Preheat oven to 200°C (400°F). Brush with egg wash if desired and bake for 15-20 minutes until golden brown.
