  • 2 teaspoons salt
  • 1 Tablespoon active dry or instant yeast
  • 1 1/2 cups cold whole milk
  • 1 1/2 cups unsalted butter (for layering)
  • 1 large egg (for egg wash)
  • 2 Tablespoons whole milk (for egg wash)

Instructions

  1. In a stand mixer bowl, mix flour, sugar, salt, and yeast. Gradually add in cold milk and softened butter; combine well.
  2. Knead dough on medium speed for about 5 minutes until smooth. Shape into a ball, cover with plastic wrap, and refrigerate for at least 1 hour.
  3. Prepare the butter layer by flattening softened butter between parchment paper into a rectangle; refrigerate until firm.
  4. Roll out chilled dough into a rectangle, encase the cold butter layer inside, and perform three turns with chilling in between.
  5. Roll out final dough into a rectangle about 1/4-inch thick, cut triangles, roll tightly from the base to form croissants.
  6. Place on a baking sheet to proof for about 30 minutes until doubled. Preheat oven to 375°F (190°C), brush with egg wash, and bake for 15–18 minutes until golden brown.
