Instructions

  1. Preheat your oven to 350°F (175°C). Slice the croissants horizontally and place them on a baking sheet. Toast in the oven for 7-8 minutes until golden.
  2. In a skillet over medium-high heat, cook the turkey bacon until crispy, about 3-4 minutes on each side.
  3. Whisk together eggs and half and half until smooth. Melt butter in a non-stick pan over medium-low heat, then add the egg mixture. Stir gently until soft curds form; avoid overcooking.
  4. Assemble the sandwiches: layer cheddar cheese on the bottom of each croissant, followed by turkey bacon and scrambled eggs. Top with the other half of the croissant.
