  • 1 1/2 pounds boneless, skinless chicken breasts
  • 2 tablespoons Cajun seasoning
  • 3 cups low-sodium chicken broth
  • 8 ounces cream cheese, cubed
  • 1 cup shredded Parmesan cheese
  • 12 ounces penne or rotini pasta
  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1/2 yellow onion, sliced
  • Salt and pepper, to taste

Instructions

  1. Rub chicken breasts with Cajun seasoning, garlic powder, paprika, salt, and pepper. Optional: marinate for 15–20 minutes.
  2. Place seasoned chicken in the slow cooker along with sliced bell peppers, onion, and chicken broth. Cook on low for 6–7 hours or on high for 3–4 hours.
  3. Once cooked, shred the chicken using two forks and return it to the slow cooker.
  4. Stir in cream cheese and Parmesan until melted and creamy; cook on low for an additional 10–15 minutes.
  5. Cook pasta according to package instructions until al dente, then drain.
  6. Combine the cooked pasta with the sauce in the slow cooker before serving hot.
