  • 1 cup light brown sugar
  • 1 cup soy sauce
  • ⅓ cup bourbon whiskey
  • 2 tablespoons apple cider vinegar
  • ½ teaspoon ground ginger
  • 1 tablespoon honey
  • ½ teaspoon red pepper flakes
  • 4 cloves garlic, minced
  • 3 tablespoons cornstarch
  • 2 tablespoons water

Instructions

  1. Place chicken thighs in the bottom of the slow cooker.
  2. In a mixing bowl, whisk together brown sugar, soy sauce, bourbon, apple cider vinegar, ginger, honey, red pepper flakes, and minced garlic until combined.
  3. Pour the sauce mixture over the chicken.
  4. Cover and cook on high for 4 hours or low for 6 hours until chicken is tender.
  5. Remove chicken from the slow cooker and shred or chop as desired.
  6. To thicken the sauce, mix cornstarch with water to make a slurry and stir into the sauce in the slow cooker.
  7. Return shredded chicken to the sauce and cook for an additional 5–10 minutes until thickened.
  8. Serve over rice or your preferred side.
