  • 2 tbsp olive oil

  • 1 cup shredded cheddar cheese
  • ¼ cup chopped green onions

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and scrub the potatoes; poke holes in them with a fork.
  3. Bake directly on the oven rack for 45-60 minutes until fork-tender.
  4. Allow to cool slightly, then cut in half and scoop out the insides, leaving a small layer.
  5. In a bowl, combine scooped potato, olive oil, salt, pepper, cheese, green onions, and sour cream; mix until creamy.
  6. Fill each potato half with the mixture and place back in the oven for an additional 15-20 minutes until golden brown.
