  • 2 pounds zucchini (cut into 1/4-inch slices)
  • Salt
  • 2 tablespoons butter
  • 3 cloves garlic (minced)
  • ½ cup heavy cream
  • ½ cup sour cream
  • 1 teaspoon Italian seasoning
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup grated parmesan cheese (divided)
  • 1 cup shredded mozzarella cheese (divided)

Instructions

  1. Preheat the oven to 425°F and butter a baking dish.
  2. Cut zucchini into slices, sprinkle with salt, and let rest for 15 minutes to remove excess moisture.
  3. Wipe off excess salt from the zucchini and arrange evenly in the baking dish.
  4. In a mixing bowl, whisk together heavy cream, sour cream, Italian seasoning, onion powder, salt, black pepper, and half of the parmesan cheese.
  5. Melt butter in a saucepan over medium heat; add garlic and sauté until fragrant.
  6. Add the cream mixture to the saucepan with garlic; whisk until bubbling gently.
  7. Stir in half of the mozzarella cheese until melted.
  8. Pour the creamy mixture over the zucchini slices and top with remaining cheeses.
  9. Bake for 18 to 22 minutes until golden brown.
