  • 15-ounce can black beans (drained and rinsed)
  • 10-ounce can diced tomatoes with green chilies
  • 1 cup diced potatoes
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • Salt and black pepper, to taste
  • 1 cup heavy cream or half-and-half
  • 1 cup shredded cheddar cheese
  • Sliced green onions
  • Crushed tortilla chips

Instructions

  1. In a large pot over medium heat, brown the ground beef until fully cooked.
  2. Add diced onion and minced garlic; sauté until the onion becomes translucent.
  3. Pour in beef broth along with diced tomatoes (juice included), corn, black beans, potatoes, smoked paprika, chili powder, cumin, salt, and pepper; bring to a boil.
  4. Reduce heat to low and simmer for about 20 minutes until potatoes are tender.
  5. Stir in heavy cream or half-and-half followed by shredded cheese until melted.
  6. Serve hot topped with sliced green onions and crushed tortilla chips.
