  • 4 slices pineapple
  • 1 avocado, sliced
  • 1 corn on the cob
  • 1/2 cup pepitas
  • 1 cup fresh blueberries
  • 1 Tablespoon olive oil
  • 23 cups fresh mixed greens

Instructions

  1. Prepare the dressing by combining orange juice, lemon juice, almond milk, parsley, olive oil, rice vinegar, shallots, and salt in a mason jar. Blend with an immersion blender until smooth.
  2. Preheat your grill to medium-high heat.
  3. Brush the pineapple slices with olive oil and grill for 2 minutes on each side until marked. Grill corn for about 5 minutes per side until slightly charred.
