  • 2 Tbsp all purpose flour
  • 2 c. blueberries (fresh)
  • 1 c. butter (softened)
  • 8 oz cream cheese (softened)
  • 1 1/2 c. sugar
  • 1 1/2 tsp vanilla extract
  • 4 eggs
  • 2 c. all purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Toss fresh blueberries with 2 tablespoons of flour and set aside.
  3. In a large mixing bowl, cream together softened butter, cream cheese, sugar, and vanilla until light and fluffy. Beat in eggs one at a time.
  4. In another bowl, mix remaining flour with baking powder and salt before gradually adding it to the wet ingredients until just combined.
  5. Gently fold in the floured blueberries.
  6. Pour the batter into two greased 9'' x 5'' loaf pans and bake for about 45 minutes or until a toothpick comes out clean.
  7. Let cool on a wire rack for 10 minutes before removing from pans.
