- 2 Tbsp all purpose flour
- 2 c. blueberries (fresh)
- 1 c. butter (softened)
- 8 oz cream cheese (softened)
- 1 1/2 c. sugar
- 1 1/2 tsp vanilla extract
- 4 eggs
- 2 c. all purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
Instructions
- Preheat your oven to 350°F (175°C).
- Toss fresh blueberries with 2 tablespoons of flour and set aside.
- In a large mixing bowl, cream together softened butter, cream cheese, sugar, and vanilla until light and fluffy. Beat in eggs one at a time.
- In another bowl, mix remaining flour with baking powder and salt before gradually adding it to the wet ingredients until just combined.
- Gently fold in the floured blueberries.
- Pour the batter into two greased 9'' x 5'' loaf pans and bake for about 45 minutes or until a toothpick comes out clean.
- Let cool on a wire rack for 10 minutes before removing from pans.
