- 1 cup pearl barley, rinsed

Instructions
- In a large pot, heat olive oil over medium-high heat. Sear the beef chuck pieces until browned on all sides.
- Add chopped onions, minced garlic, diced carrots, and celery. Sauté for about five minutes until softened.
- Stir in rinsed pearl barley and add the beef broth along with thyme and bay leaves. Mix well.
- Bring the mixture to a gentle boil, then reduce heat to low and cover. Simmer for about one hour or until the beef is tender.
