  • 2 bay leaves

Instructions

  1. In a large pot, heat olive oil over medium-high heat. Sear the beef chuck pieces until browned on all sides.
  2. Add chopped onions, minced garlic, diced carrots, and celery. Sauté for about five minutes until softened.
  3. Stir in rinsed pearl barley and add the beef broth along with thyme and bay leaves. Mix well.
  4. Bring the mixture to a gentle boil, then reduce heat to low and cover. Simmer for about one hour or until the beef is tender.
  5. Season with salt and pepper before serving. Garnish with fresh parsley if desired.
