  • 1½ cups cherry tomatoes (halved)
  • ½ cup cucumber (finely chopped)
  • 2 tablespoons fresh basil (minced)
  • 3 tablespoons olive oil (divided)
  • 1 tablespoon lime juice
  • ¼ teaspoon salt

Instructions

  1. In a small bowl, whisk together 2 tablespoons of olive oil, lime juice, and salt until well combined. Set aside.
  2. Heat the remaining 1 tablespoon of olive oil in a skillet over medium heat. Add the corn and cook until tender, about 5-7 minutes.
  3. Transfer the cooked corn to a large mixing bowl and let it cool slightly. Add cherry tomatoes, cucumber, and minced basil.
  4. Refrigerate the salad until ready to serve. Just before serving, drizzle with the prepared dressing.
