Ingredients
- 1 lb beef sirloin, thinly sliced
- 8 oz fresh mushrooms, sliced
- 1 medium onion, chopped

- 2 cups beef broth
- 1 cup sour cream
- 2 tbsp cornstarch
- 1 tbsp Dijon mustard
- Salt and pepper to taste
Instructions
- Slice the beef sirloin and chop the onions and mushrooms.
- In a large skillet over medium-high heat, sauté the beef strips in oil until browned (about 3 minutes per side). Remove and set aside.
- In the same skillet, cook onions and mushrooms until softened (about 5 minutes). Add garlic in the last minute.
- Pour in beef broth; scrape up brown bits from the pan. Stir in Dijon mustard and bring to a simmer before adding cornstarch mixed with water to thicken.
- Reduce heat to low and stir in sour cream until smooth. Season with salt and pepper.
- Return beef to skillet; simmer for another 5 minutes. Serve over egg noodles or rice.
