- 2 tbsp desiccated coconut
- 3/4 cup diced mango

- Preheat your oven to 400F (200C) and line a baking sheet with parchment paper.
- In a large bowl, mix together flour, salt, sugar, and baking powder.
- Cut the cold butter into small pieces and blend it into the flour mixture until it resembles coarse crumbs.
- In another bowl, whisk the egg with coconut milk and vanilla extract. Add this to the flour mixture along with desiccated coconut and stir until just combined.
- Gently fold in the diced mango. Transfer dough to a floured surface, flatten slightly, and cut into triangles or squares.
- Place on the baking sheet, sprinkle with extra sugar, then bake for 18-22 minutes until golden brown.
