  • 1/2 tsp salt
  • 3 tbsp sugar
  • 1 tbsp baking powder
  • 6 tbsp cold unsalted butter
  • 1/2 cup full-fat coconut milk
  • 1 egg
  • 1/2 tsp vanilla extract
  • 2 tbsp desiccated coconut
  • 3/4 cup diced mango

Instructions

  1. Preheat your oven to 400F (200C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together flour, salt, sugar, and baking powder.
  3. Cut the cold butter into small pieces and blend it into the flour mixture until it resembles coarse crumbs.
  4. In another bowl, whisk the egg with coconut milk and vanilla extract. Add this to the flour mixture along with desiccated coconut and stir until just combined.
  5. Gently fold in the diced mango. Transfer dough to a floured surface, flatten slightly, and cut into triangles or squares.
  6. Place on the baking sheet, sprinkle with extra sugar, then bake for 18-22 minutes until golden brown.
  7. Allow to cool slightly before serving.
