Instructions
- Preheat oven to 350°F (175°C). Grease two 9-inch round cake pans.
- In a bowl, whisk flour, baking powder, and salt. In another bowl, beat butter and sugar until fluffy; add eggs one at a time. Stir in extracts and alternate adding dry ingredients and coconut milk until well combined.
- Pour batter into pans and bake for 25-30 minutes. Cool completely.
- For frosting, beat cream cheese with powdered sugar until smooth; whip heavy cream separately until stiff peaks form, then fold into cream cheese mixture.
- Assemble cake by layering frosting between cooled cakes and on top/sides. Press toasted coconut onto the frosting.
