  • 2 medium Roma tomatoes (chopped)
  • 1/2 cup chopped red onion (rinsed under cool water to remove harsh bite)
  • 1 clove garlic (minced)
  • 1 Tbsp fresh lime juice

Instructions

  1. In a mixing bowl, whisk together the lime zest, lime juice, olive oil, honey, chopped cilantro, minced garlic, salt, and pepper. Add the chicken breasts to the marinade. Ensure they are well coated. Cover and refrigerate for at least 15 minutes.
  2. Preheat your grill or grill pan over medium-high heat. Brush with a little olive oil to prevent sticking.
  3. Remove the chicken from the marinade and let any excess drip off. Place it on the hot grill. Grill each side for about 5 minutes or until fully cooked through and juices run clear. Remove from heat.
