  • 175g plain flour
  • 4 large eggs
  • 300ml full-fat milk
  • 6 rashers turkey bacon
  • 12 chipolata sausages
  • 200g sage and onion stuffing
  • 200g Brussels sprouts
  • 2 small-medium leeks
  • 25g butter
  • 1 tbsp olive oil
  • 2 onions
  • 1 tsp chopped thyme leaves
  • 1 tbsp plain flour
  • 500ml chicken stock
  • salt and freshly ground black pepper

Instructions

  1. Preheat your oven to 220C (200C Fan/Gas 7).
  2. In a bowl, sift flour and create a well. Beat eggs and milk together; pour into well. Whisk until smooth; add mustard, salt, and pepper.
  3. Wrap turkey bacon around each chipolata sausage.
  4. Heat oil in a roasting tin; add wrapped sausages, onion wedges, and stuffing balls. Roast for 20 minutes until golden brown.
  5. For gravy: Sauté onions with butter and olive oil until tender; add thyme and flour, then slowly stir in chicken stock. Simmer until thickened.
  6. Add Brussels sprouts and leeks to the roasting tin. Pour batter over ingredients; bake for an additional 20–25 minutes until puffed up.
  7. Serve hot with gravy drizzled on top.
