  • 1/4 cup sugar
  • 1/4 cup water
  • 1/4 teaspoon almond extract
  • 1/2 cup salted butter (softened)
  • 1/2 cup granulated sugar
  • 1 1/2 cups almond flour
  • 1 large egg
  • 1 egg yolk
  • 2 teaspoons vanilla extract
  • 2 tablespoons whole milk
  • 1/4 cup sliced almonds
  • powdered sugar (for dusting)

Instructions

  1. Prepare the almond filling by combining butter and sugar until fluffy. Mix in almond flour, eggs, vanilla extract, and almond extract until well combined.
  2. Preheat your oven to 375°F (190°C). Slice open each day-old croissant without cutting all the way through.
  3. Spoon the almond filling and dark chocolate pieces into each croissant.
  4. Place filled croissants on a baking sheet lined with parchment paper. Brush tops with whole milk and sprinkle with sliced almonds.
