  • 22.5 lbs deboned skin-on chicken thighs
  • 1/2 cup fresh lime juice
  • 1/4 cup olive oil
  • 3 tablespoons fresh cilantro leaves
  • 2 teaspoons chipotle chili powder
  • 5 cloves garlic
  • 1 jalapeño, chopped finely
  • 1 teaspoon fresh lime zest
  • 1 1/2 tablespoons honey
  • 2 teaspoons salt

Instructions

  1. Prepare the Chicken: Remove bones from chicken thighs while keeping the skin on. Rinse and pat dry.
