  • 1/4 cup fresh lime juice
  • 2 tablespoons olive oil
  • 1 tablespoon finely chopped cilantro (or parsley)
  • 2 tablespoons Thai sweet chili sauce
  • 2 cloves garlic, finely chopped
  • 1/2 tablespoon honey
  • Pinch of salt

Instructions

  1. Soak bamboo skewers in cold water for about 30 minutes.
  2. Rinse shrimp under cold water and pat dry.
  3. In a mixing bowl, whisk together lime juice, olive oil, cilantro (or parsley), Thai sweet chili sauce, garlic, honey, and salt.
  4. Add shrimp to the marinade and toss well; let marinate for 30 minutes.
  5. Preheat grill over medium heat. Thread shrimp onto soaked skewers.
  6. Grill for 2-3 minutes on each side until pink and slightly charred.
