  • 1 ½ lbs Yukon gold potatoes
  • 1 small yellow onion
  • ¾ cup carrots
  • 2 ribs celery
  • 3 cloves garlic
  • 5 cups chicken broth
  • 1 cup half and half
  • 12 teaspoons olive oil
  • 2 tablespoons butter
  • Salt
  • Pepper
  • 1 teaspoon hot sauce
  • ¼ cup flour
  • 1 ½ cups cheddar cheese (shredded)
  • Green onions (to garnish)
  • 1 teaspoon dried parsley
  • ½ teaspoon EACH: dried rosemary, oregano, mustard powder
  • ¼ teaspoon pepper
  • 1 pinch red pepper flakes

Instructions

  1. Cook turkey bacon in a large pot over low heat until crispy. Reserve drippings.
  2. Season chicken with salt and pepper, then sear in the same pot until golden brown.
  3. Add reserved drippings and sauté onions, carrots, and celery until softened.
  4. Stir in garlic, hot sauce, and flour; cook briefly.
  5. Gradually mix in chicken broth followed by half and half until smooth.
  6. Add diced potatoes and seared chicken; bring to a boil then simmer until potatoes are tender.
  7. Stir in shredded cheese until melted and serve garnished with green onions.
