  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup whole or 2% milk
  • Ground cayenne pepper
  • Garlic powder
  • 5.5 ounces freshly grated medium cheddar cheese
  • 2 cups finely chopped broccoli florets

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the russet potatoes. Drizzle with olive oil and sprinkle with salt.
  3. Wrap each potato in aluminum foil and place on a baking sheet. Bake for about 50 minutes until fork-tender.
  4. For the Broccoli Cheese Sauce, melt butter in a medium saucepan over medium heat, add flour, and whisk until smooth.
  5. Gradually whisk in milk until thickened (3–5 minutes). Stir in spices and half of the cheese until melted, then fold in broccoli and cook until vibrant green.
