  • 1 cup Heavy Cream (Half and half or whole milk can be used)

  • Onion Powder (To taste)
  • 1 teaspoon Italian Seasoning (Adjust to taste)
  • 1 teaspoon Paprika (Adjust to taste)
  • 1 cup Matchstick Carrots (Fresh or frozen)
  • 1 1/2 cups Uncooked Macaroni Noodles (Any small pasta shape can be used)
  • 1 cup Shredded Cheddar Cheese (Consider mixing different cheese varieties)
  • 1/2 cup Shredded Parmesan Cheese (Pecorino Romano is a flavorful substitute)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté diced onion until softened, about 5 minutes. Add minced garlic and cook for another minute.
  2. Stir in ground beef and cook until browned; drain excess fat if necessary.
  3. Sprinkle flour over the mixture and stir well; cook for 2 minutes.
  4. Gradually add chicken broth while stirring until combined. Bring to a simmer before adding heavy cream.
  5. Season with salt, pepper, onion powder, Italian seasoning, paprika, and matchstick carrots; stir well.
  6. Add uncooked macaroni noodles and cook according to package directions until al dente.
  7. Remove from heat and stir in shredded cheddar and Parmesan until melted.
