  • 20 oz refrigerated three cheese tortellini
  • 2 Tbsp extra virgin olive oil
  • 1 medium yellow onion, chopped
  • 2 ears corn, kernels removed
  • 2 cups grape tomatoes
  • 2 medium zucchini, sliced
  • 3 garlic cloves, minced
  • 1 1/4 cups marinara sauce
  • Salt and pepper to taste
  • Fresh basil and parsley for garnish

Instructions

  1. Boil the tortellini in lightly salted water until al dente (about one minute less than package instructions). Reserve some pasta water before draining.
  2. In a large sauté pan, heat olive oil over medium-high heat. Sauté chopped onion for about 3 minutes.
  3. Add corn and continue to sauté for another 2 minutes.
  4. Stir in grape tomatoes and cook until softened (about 3 minutes), then add zucchini and garlic; sauté until tender (6-8 minutes).
  5. Combine the cooked tortellini and marinara sauce with the veggies in the pan. Toss over medium heat for about 2 minutes, adding reserved pasta water as needed to adjust consistency.
  6. Season with salt and pepper to taste and mix in half of the Parmesan cheese along with chopped herbs.
  7. Serve warm topped with remaining Parmesan cheese.
