  • 2 chicken breasts, cubed
  • 1 tablespoon Cajun seasoning
  • 2 tablespoons olive oil

  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 8 oz cream cheese, softened
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Chopped parsley (optional, for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook pasta according to package instructions; drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add chicken and Cajun seasoning; cook until browned (5–7 minutes). Remove from skillet.
  4. Sauté onion, bell pepper, and garlic in the same skillet for 3–4 minutes until softened.
  5. Add cream cheese; stir until melted. Mix in heavy cream and chicken broth, then add cheeses and seasonings.
  6. Return chicken to skillet; combine with pasta until well coated.
  7. Transfer to a greased baking dish and bake for 20–25 minutes or until golden and bubbly.
