Ingredients
- 9 tbsp salted butter
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 egg
- 1 tbsp heavy cream
- 1 1/2 tsp vanilla extract
- 1 1/4 cup + 2 tbsp all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- 3/4 cup semi-sweet chocolate chips
- 3 cups kataifi
- 1 cup pistachio cream/butter
- 2 tbsp salted butter for kataifi
- 2 cups heavy cream for ganache
- 1 cup semi-sweet chocolate chips for ganache
- Chopped pistachios for garnish
Instructions
- Preheat your oven to 350°F. Grease an 8×8-inch baking pan and line it with parchment paper.
- In a medium saucepan, melt salted butter over medium-high heat until browned. Allow it to cool slightly in a large bowl.
- In another bowl, whisk together flour, baking soda, baking powder, and salt.
- Mix brown sugar and granulated sugar into the cooled butter, then add the egg, heavy cream, and vanilla; whisk until smooth.
- Fold in the dry ingredients until just combined, then add chocolate chips.
- Spread the mixture evenly in the prepared baking pan and bake for 22-27 minutes until golden.
- In a skillet, melt two tablespoons of salted butter and toast kataifi until golden brown. Combine with pistachio cream in a bowl.
- Prepare the chocolate ganache by heating heavy cream until boiling and pouring it over semi-sweet chocolate chips; stir until smooth.
- Once the cookie base has cooled, layer on the pistachio filling followed by the chocolate ganache.
- Chill for one hour before cutting into bars.
