  • 4 salmon fillets (approximately pounds)
  • ¾ cup peach preserves
  • ¼ cup bourbon
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons soy sauce
  • 2 teaspoons apple cider vinegar
  • 2 teaspoons Dijon mustard
  • 2 teaspoons minced garlic
  • Salt and pepper to taste
  • Fresh peaches for garnish

Instructions

  1. In a medium bowl, whisk together peach preserves, bourbon, olive oil, soy sauce, apple cider vinegar, Dijon mustard, garlic, salt, and pepper.
  2. Reserve half of the marinade in the refrigerator. Place salmon fillets in a resealable bag and pour in the remaining marinade. Seal tightly and refrigerate for at least 30 minutes.
  3. Preheat your oven to 375°F.
  4. Heat an oven-safe skillet over medium-high heat with a tablespoon of olive oil. Sear salmon skin side up for about 2-3 minutes until golden brown.
  5. Flip the salmon so skin side is down; add sliced peaches around it and cook for another 2-3 minutes until softened.
  6. Pour reserved marinade over salmon and peaches before transferring the skillet to the oven. Bake for 12-15 minutes or until the salmon reaches an internal temperature of 145°F.
  7. Serve hot garnished with fresh parsley.
