- ¾ cup peach preserves
- ¼ cup bourbon

- 2 teaspoons Dijon mustard
- 2 teaspoons minced garlic
- Salt and pepper to taste
- Fresh peaches for garnish
Instructions
- In a medium bowl, whisk together peach preserves, bourbon, olive oil, soy sauce, apple cider vinegar, Dijon mustard, garlic, salt, and pepper.
- Reserve half of the marinade in the refrigerator. Place salmon fillets in a resealable bag and pour in the remaining marinade. Seal tightly and refrigerate for at least 30 minutes.
- Preheat your oven to 375°F.
- Heat an oven-safe skillet over medium-high heat with a tablespoon of olive oil. Sear salmon skin side up for about 2-3 minutes until golden brown.
- Flip the salmon so skin side is down; add sliced peaches around it and cook for another 2-3 minutes until softened.
- Pour reserved marinade over salmon and peaches before transferring the skillet to the oven. Bake for 12-15 minutes or until the salmon reaches an internal temperature of 145°F.
