  • 1 1/2 tablespoons water
  • Sugar (to taste)
  • 6 oz cream cheese
  • 4 tablespoons milk

  • 1 1/2 teaspoons vanilla extract
  • 1/2 cup powdered sugar

Instructions

  1. In a medium saucepan, combine blackberries and water over medium heat for 10-15 minutes until softened. Sweeten with sugar if necessary, then cool.
  2. Blend the cooled blackberry mixture until smooth and refrigerate.
  3. Beat together cream cheese, milk, lime juice, zest (if using), vanilla, and powdered sugar until smooth.
  4. Layer the blackberry puree and cheesecake mixture in popsicle molds. Insert sticks and freeze until solid.
