With just a handful of ingredients, you can customize the flavors to suit your preference, making them perfect for everyone in your family, including picky eaters. Ingredients

Scale
  • 1 large zucchini
  • 1/2 tsp salt (divided)
  • Avocado oil spray (or 1 to 2 tsp liquid oil)
  • 1 tsp smoked paprika
  • 1/4 tsp ground pepper

Instructions

  1. Slice the zucchini into 1/8 inch thick rounds using a mandolin slicer or food processor. Layer with salt in a colander and let drain for one hour.
  2. Preheat the oven to 225°F (107°C) and line two baking sheets with parchment paper.
  3. Pat the zucchini slices dry with tea towels and arrange them on the prepared baking sheets without overlapping.
  4. Lightly spray with avocado oil or brush with liquid oil, then season with paprika, pepper, and remaining salt.
  5. Bake for 70 to 90 minutes until crispy, rotating sheets halfway through. Remove chips that crisp early.
  6. Serve immediately or store in an airtight container for up to three days.
