  • Salt and pepper, to taste
  • 1/2 cup teriyaki sauce
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 cup pineapple chunks, fresh or canned
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds
  • 2 cups cooked rice

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine 1/2 cup teriyaki sauce, 2 minced garlic cloves, and 1 tablespoon grated ginger.
  3. Marinate 4 chicken thighs in the mixture for at least 30 minutes.
  4. Place marinated chicken in a baking dish, pour remaining marinade over it, and scatter 1 cup pineapple chunks around the chicken.
  5. Bake for 35-40 minutes until the chicken reaches an internal temperature of 165°F (75°C).
