  • 6 cups chicken broth
  • 1 tsp minced garlic
  • 2 cups quick cook grits
  • 8 oz smoked Gouda cheese (shredded or cubed)
  • 8 oz sharp cheddar cheese (shredded)
  • 2 tbsp butter
  • 1/2 cup half & half
  • 4 beaten eggs
  • 1/2 tsp salt
  • 1/4 tsp pepper

Instructions

  1. Bring chicken broth to a boil in a medium saucepan. Stir in minced garlic.
  2. Gradually add the quick cook grits while whisking continuously to prevent lumps. Cook according to package instructions until thickened.
  3. Remove from heat and stir in smoked Gouda and cheddar until melted. Add butter, half & half, beaten eggs, salt, and pepper; mix well.
  4. Pour the mixture into a greased baking dish and spread evenly.
  5. Preheat oven to 350°F (175°C) and bake for 30–35 minutes or until golden brown on top. Let cool slightly before serving.
