- 2 large baking potatoes
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1 tsp salt
- 1 tsp black pepper
- 0.5 tsp red chili flakes
- 1 block (200g) of feta cheese
- 1 head of garlic (top cut off)
- 1 lemon, quartered
- 1 tbsp honey
- 1/4 cup fresh basil
Instructions
- Preheat your oven to 200C (390F).
- Wash and cube the potatoes. In a saucepan, cover them with water and bring to a boil. Par-boil for 6-8 minutes, then drain and let steam dry.
- In a baking dish, combine the par-boiled potatoes with thyme, oregano, salt, pepper, and olive oil. Mix well.
- Roast the seasoned potatoes in the oven for about 30-40 minutes until golden brown and crispy.
- Add feta cheese to the center of the baking tray and squeeze half a lemon over it.
- Roast for an additional 15 minutes after adding the feta.
- Once out of the oven, mash the roasted garlic and mix it into the potatoes along with juice from the remaining lemon.
- Drizzle with honey and sprinkle with fresh basil before serving.
