Description

Baked Feta Potatoes are a delightful twist on traditional roasted potatoes, combining crispy textures with creamy feta cheese to create a side dish that’s both flavorful and visually appealing. This easy recipe features par-boiled potatoes seasoned with aromatic herbs and baked alongside feta and garlic, resulting in a rich dish perfect for any occasion—from family dinners to gatherings with friends.


Ingredients

  • 2 large baking potatoes
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 0.5 tsp red chili flakes
  • 1 block (200g) of feta cheese
  • 1 head of garlic (top cut off)
  • 1 lemon, quartered
  • 1 tbsp honey
  • 1/4 cup fresh basil

Instructions

  1. Preheat your oven to 200C (390F).
  2. Wash and cube the potatoes. In a saucepan, cover them with water and bring to a boil. Par-boil for 6-8 minutes, then drain and let steam dry.
  3. In a baking dish, combine the par-boiled potatoes with thyme, oregano, salt, pepper, and olive oil. Mix well.
  4. Roast the seasoned potatoes in the oven for about 30-40 minutes until golden brown and crispy.
  5. Add feta cheese to the center of the baking tray and squeeze half a lemon over it.
  6. Roast for an additional 15 minutes after adding the feta.
  7. Once out of the oven, mash the roasted garlic and mix it into the potatoes along with juice from the remaining lemon.
  8. Drizzle with honey and sprinkle with fresh basil before serving.
