- 6 cups chicken broth
- 1 (14.5-ounce) can diced tomatoes
- 1 (9-ounce) package cheese tortellini

Instructions
- In a large pot, heat olive oil over medium-high heat. Add Italian sausage and cook until browned, breaking it apart as it cooks (about 5–7 minutes). Remove and set aside.
- In the same pot, sauté diced onion, carrots, and celery for about 5 minutes until tender. Add minced garlic and Italian seasoning; stir for another minute.
- Pour in chicken broth and diced tomatoes. Return the sausage to the pot and bring to a boil. Reduce heat and simmer for 20 minutes.
- Add cheese tortellini and cook according to package instructions (around 7–9 minutes) until tender.
- Stir in fresh spinach until wilted (1–2 minutes). Season with salt and pepper to taste before serving.
