  • 1 pound Italian sausage (or turkey sausage)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, peeled and sliced
  • 2 stalks celery, sliced
  • 1 teaspoon Italian seasoning
  • 6 cups chicken broth
  • 1 (14.5-ounce) can diced tomatoes
  • 1 (9-ounce) package cheese tortellini
  • 2 cups fresh spinach leaves
  • Salt and black pepper, to taste

Instructions

  1. In a large pot, heat olive oil over medium-high heat. Add Italian sausage and cook until browned, breaking it apart as it cooks (about 5–7 minutes). Remove and set aside.
  2. In the same pot, sauté diced onion, carrots, and celery for about 5 minutes until tender. Add minced garlic and Italian seasoning; stir for another minute.
  3. Pour in chicken broth and diced tomatoes. Return the sausage to the pot and bring to a boil. Reduce heat and simmer for 20 minutes.
  4. Add cheese tortellini and cook according to package instructions (around 7–9 minutes) until tender.
  5. Stir in fresh spinach until wilted (1–2 minutes). Season with salt and pepper to taste before serving.
