  • 1 cup (240 ml) water
  • ¼ cup (50 g) granulated sugar
  • 4 tablespoons (60 ml) vanilla extract (alcohol-free)
  • 1 cup almond flour
  • 2 tablespoons (15 g) all-purpose flour
  • ½ teaspoon salt
  • ½ cup (100 g) granulated sugar
  • ½ cup (113 g) unsalted butter, room temperature
  • ½ teaspoon almond extract
  • 2 eggs, room temperature
  • 8 day-old croissants
  • ¼ cup sliced almonds for topping (optional)
  • ¼ cup (30 g) powdered sugar for topping (optional)

Instructions

  1. Preheat your oven to 350°F (177°C) and line baking sheets with parchment paper.
  2. In a saucepan, combine the water and sugar. Heat over medium until simmering. Allow it to cook until the sugar dissolves and modify with vanilla extract. Transfer the syrup to a heat-safe bowl or cup to cool.
  3. In the bowl of your stand mixer fitted with a whisk attachment, combine almond flour, all-purpose flour, salt, and granulated sugar. Mix on medium speed until well combined. Add in softened butter, eggs, and almond extract. Whisk for 2-3 minutes until light and fluffy.
  4. Slice each day-old croissant in half lengthwise. Brush the inside of each piece generously with the cooled simple syrup.
  5. Spread about two tablespoons of almond filling on each bottom piece of croissant. Place the top half back on and brush more syrup on top. Spread an additional tablespoon of filling over each top half and sprinkle with sliced almonds if desired.
  6. Bake your assembled almond croissants in the preheated oven for 15-18 minutes or until golden brown and set. Allow them to cool on the baking sheet for about 3-4 minutes before dusting with powdered sugar and serving warm.
